Cody is shooting Hornady 154 gr Interlocks from his 7mm 08 at 2600 fps. The meat damage is just crazy, my .270 generally has far less meat damage. I do not understand this low velocity meat damage.
I have gone off mono bullets because they just kill slower with same shot placement, no doubts about it, mono shots need to be more precise.
I am wondering if a bonded bullet is not the answer ?

With monos the answer is to shoot on the shoulder. Helps with bullet expansion and takes out top of heart and both lungs. You have your dog to help find the animal.
@tripodmvr Mono bullets through bone cause massive meat damage, bone fragments are worse than cup core damage.

A shot not low on the shoulder but more to the middle of the body. Shoot too high and you cut the spine.
